Napa Valley Cabernet Sauvignon Reserve

Our Cabernet Sauvignons garner their style from the diverse array of vineyards in Napa’s mountain, benchland and valley floor areas. Within each of these unique topographies, we focus on locations with well drained, nutrient deprived soils that can stress the vines. With proper farming, the grapes from these locations possess extraordinary concentration of flavor, color, and texture. Cabernet Sauvignon does not lend itself to vineyard designation. Quite the contrary. Cab thrives when blending multiple vineyard sites especially in places as diverse as Napa Valley with its multitude of soils, slopes, and pockets of unique weather.

Our approach is to create a perfect balance in this Cab by marrying the weight and firm tannins of the mountains with the supple fruit forward notes of the valley floor and honoring the natural acidity.

WINEMAKER NOTES
For Quilt Cabernet Sauvignon Reserve, the winemaking process started by picking fruit at precisely the right moment. Often this meant waiting until ripeness--determined both by testing sugar levels as well as by assessing other aspects of phenological readiness--had reached an ideal point. Once in the cellar, we kept lots separated by vineyard. While the wine underwent extended maceration, we re-evaluated the progress of each lot before moving the wine to small French oak barrels (70% new oak, 30% seasoned) where it underwent a secondary fermentation. Our final blend (100% Napa Valley Cabernet Sauvignon) came about after numerous blind tastings.
TASTING NOTES

Color Deep, dark ruby red

Aromatics Black currant, bright cherry, toffee, blackberry, marionberry pie and notes of dark chocolate.

Palate Rich and satisfying with flavors of boysenberry jam, black cherry pie filling, and cocoa layered with notes of vanilla and hazelnut.

Structure A full-bodied, cabernet with layers of concentrated black fruit, bright acidity and excellent balance.  This stellar vintage is represented in this rich, aromatic and smooth wine.  The finish is long, velvety and satisfying.

Food Pairing Prime rib with sautéed mushrooms, pepper crusted grilled lamb, or short ribs with garlic polenta.

Napa Valley Cabernet Sauvignon

For Quilt Napa Valley, we focus on vineyards with well-draining, low-nutritive soils that stress the vines. The result of these soils is a grape crop with extraordinary concentration of flavor, color, and texture. While the majority of the fruit (70%) comes from the floor of the Napa Valley to achieve the richness and elegance desired, we also relied on some grapes grown at elevation on Napa Valley benchlands and hillsides for a final blend with more structure and complexity than we could have achieved had we used fruit grown solely on the Valley floor.

Napa Valley Fabric of the Land Red Wine

For our Napa Valley Quilt Fabric of the Land Red Wine, we work with grapes representing the diversity of varietals cultivated in the Napa Valley AVA. We source Petite Sirah, Merlot, Zinfandel, and Petit Verdot grapes from a spectrum of Napa Valley proper; from Oak Knoll in the South to Calistoga in the North. The result of blending these diverse varietals and regions yields wines of extraordinary concentration of flavor, color, and texture. While the majority of the fruit comes from the valley floor, we also relied on grapes grown on the foot-slopes to achieve the texture and grip we desired.

WINEMAKER NOTES
Our winemaking begins in the vineyards, picking fruit at optimum physiological maturity to create a blend that highlights the outstanding terroir of the Napa Valley. From the moment the grapes are harvested until final blending, each vineyard lot is kept separate. Once in the cellar, each lot is worked in a tailor-made fashion, typically beginning with a deep cold soak (cryoextraction) to best prepare the skins to give up all the phenolics and color they can during fermentation. Cold and long fermentations allow ample time to coax these elements out, and then an extended maceration helps soften harsh tannins. Then, we age the wines in French Oak barrels. The Petite Sirah adds spice and complexity, while the Merlot contributes round mouthfeel and soft tannins. Next, the Zinfandel provides a vibrant fruit core, and Petit Verdot gives structure and color to the final blend: The Fabric of the Land, Napa Valley.

Aroma Abundant aromas of dark cherry, blackberry and licorice followed by hints of butterscotch and black pepper.

Palate Rich and complex with flavors of juicy dark fruits, zesty cherry, bramble, and espresso with subtle notes of cedar and clove.

Structure This eloquent wine has excellent color, balanced tannin structure and vibrant acidity.

Napa Valley Chardonnay

For this Chardonnay, we rely almost entirely on vineyards from the Carneros District where the climate is distinctly cooler and foggier than ‘up valley’. Carneros is a world unto itself. Much of its soil is dense clay due to the region’s proximity to San Pablo Bay. This soil, combined with the marine influence of cool winds, brings about Chardonnay fruit with impressive structure and a flinty minerality.

VINEYARDS
We source our Chardonnay fruit primarily from the southernmost stretches of the Carneros AVA, where vineyards have been planted close to the cool San Pablo Bay.
WINEMAKER NOTES
As harvest approaches, we regularly assessed sugar levels, acidity and pH to determine when the Chardonnay fruit for Quilt was ready to be picked. But more importantly, we waited for phenolic/physiological maturity. We wanted autumn to set in, with hard, brown seeds, copper canes, and yellowing of the canopy and a slight tan to the golden clusters. This gave us the assurance that we would have no green tones in the wine and that this Chardonnay would be opulent and showy. Once in the cellar, we whole-cluster pressed in a bladder press. The free run juice settled for 48 hours at which point we racked off heavy lees and barrel-fermented the wine in 59-gallon French oak barrels (70% new, 30% seasoned) for 15 months. The wine underwent 100% malolactic fermentation while still on the lees to achieve additional creaminess and complexity.
TASTING NOTES

Color Pale yellow with golden highlights

Aromatics Crisp yellow pear, fuji apple, meyer lemon, honey, and a hint of caramel.

Palate Meyer lemon zest, nectarine, ripe pear, yellow apple, and kiwi with intertwined notes of cantaloupe and pineapple.

Structure Bright, medium-bodied, and rich with smooth and generous layers. Complex, mouthwatering acidity with a lively finish.

Napa Valley Fumé Blanc

Pale sunlight in the glass, this beautiful expression of Sauvignon Blanc and Semillon aged in oak barrels is a delight on the nose with bright Meyer lemon tones intermingled with tropical mango, lychee and a hint of brioche.  The aromas follow through and dance on the palate with bright acidity that follows through to a lingering, yet smooth finish.  This new addition to our Napa Valley Quilt lineup can be enjoyed with everything from fresh Oysters to Roasted Pork Loin.
